PUFF PASTRY 

INGREDIENTS:- 

FLOUR:- 1 KG 

SALT:- 20 GM 

MARGIN:- 50 gm 

Chilled water:- 400 gm 

Lilly star margin :- 400 for layering


Process of making:- 

1:- In a bowl take flour , salt , margin, mix in spiral mixer at medium speed .

2:- Mix until dough become smooth.

3:- If possible keep dough refrigerated for 12 hours .

4:- Put dough outside of refrigerator to dough become at room temperature.

5:- Now make dough rectangular sheet and make 2 book fold , and 2 single fold.

6:- Use sheet as required….
