Raspberry ripple meringues



Strawberry:- 80 gm 

Raspberry jam:- 60 gm 

Egg whites:- 8 nos 

Castor sugar:- 200 gm 

Process of making:- 

Step1:- Take raspberry in a bowl and mash with a fork until broken up and turning juicy , now add the jam and mash together and make a puree. Tip into a seive resting over a bowl and press the puree with back of a spooon to extract much juice as possible.

Step2:- Take egg whites it stand mixer Wisk untill peaking, Wisk putting sugar little by little. Wisk  untill thick and glossy.

Step3:- Drizzle over the raspberry puree and lightly stir in using a spatula or large metal spoon, scooping up the meringues from the base of the bowl so that the mixture is steaked with puree , do not over mix .

Step4:- Now drop spoonful of the mixture each about the size of a egg , on the baking sheet and swirl with the back of teaspoon.

Step5:- Bake in preheated oven at 120⁰c for 90 to 120 minutes until the meringues are crisp and come easily from paper.

Cool completely and serve with extra raspberry..
