About the Baked Cheesecake :
Baked cheesecake is a dessert made in ancient Greece, which has two layers, one layer is made of biscuits or cookies and the second which is the main layer is made of cheese, fresh cream and eggs, sometimes sponge is also used in place of cake base, there are two types of cheesecake, one baked and the other unbaked. Cheesecake is a sweet dessert, yet sugar is used in making it, but sometimes even after adding sugar the cake tastes sour, people of Greece used to eat cheesecake during celebrations.
The first description of a cheesecake recipe was written about in the 5th century by a Greek philosopher, Cato the Elder of the Agri, who also mentions cheesecake in his treatise. Today’s cheesecakes have a crust that is either baked or frozen separately. It is believed that in ancient times yeast was used to make cheesecakes rise, but nowadays eggs are used, which sometimes tastes good.
Baked Cheesecake with Eggs: I always like egg based recipes and it is also easier to make than the eggless ones. Baked Cheesecake with Eggs is very tasty to eat and is very easy to make.
Eggless Baked Cheesecake: Eggless cake is mostly liked by vegetarians. Most of the people in India are vegetarians who do not eat non-veg. So, eggless cheesecake is made for them which is a bit difficult. To make eggless baked cheesecake, cream cheese, fresh cream, caster sugar, salt, condensed milk, vanilla essence, refined flour etc. are used.

Nowadays no function is complete without cake and nowadays people want to eat such cake which is full of nutrition, people do not just look at cake, so today most of the people go for cheesecake because it does not cause any harm and especially egg cheesecake is full of many types of proteins and it is also best for health, that is why the whole world is crazy about baked cheesecake.
Special ingredients used in baked cheesecake:
Cream Cheese: Cream cheese is the main ingredient of any baked cheesecake, without it cheesecake cannot be made
Fresh Cream : Fresh cream makes the batter smooth and gives a wonderful texture
Sugar: Sugar creates a nice layer and adds sweetness to any dish.
Salt: If you are making any sweet dish then adding salt to it keeps the taste maintained.
Eggs: If eggs are used in any dish then its taste automatically enhances. Eggs do a lot of work in any batter. Eggs play a very important role in everything from making it fluffy to making it tasty.
Buttermilk: Buttermilk also works in many ways, it is also used in place of milk to smoothen any batter and to enhance the taste.
How to store baked cheesecake:
After baking the baked cheesecake on a double boiler, do not touch it until it cools down completely in the oven. Now slowly drain the water from the tray and place the cheesecake along with the mold on a cardboard. Now put it in a deep freezer, whose temperature should be less than -18⁰c. As per requirement, take it out of the deep freezer and keep it in a normal freezer and serve.
How to serve Baked Cheesecake :–
If the baked cheese is absolutely fresh, then it can be served even if kept in a normal fridge, but if the baked cheesecake has been deep-frozen, then use the microwave, as microwaving makes the cake very soft and tastes delicious.
Ingredient for cake batter:-
Cream cheese | 4 kg |
Fresh cream | 5 ltr |
Castor sugar | 1500 gm |
Egg | 48 (remove 7 egg yolk) |
Vanilla essence | Few drops |
Cake Crust Ingredients
बिस्किट या कुकीज | 520 gm |
बटर | 240 ml |
हनी | 150 ml |
Baking temperature:- 155⁰c – 160⁰c,. 325⁰F.
Baking time :- 70- 85 minutes.
Process of making :
1: First of all, we will take out the cream cheese from the refrigerator and keep it aside so that the cheese comes to normal temperature.
2. After that wrap the mold from outside and bottom with silver foil, leaving only the top part open so that water does not enter inside during baking.
3. Now crush the biscuits, add melted butter and honey and mix. When it is mixed well, put it in the mold and prepare the crust. Some people bake the crust, so it depends on how you want to make it.
4: Now put normal temperature cheese, cream and sugar in the stand mixer and beat on slow speed until the sugar melts completely. Now when the sugar dissolves, add eggs one by one. Mix on slow speed only, keep in mind to add only one egg at a time.
When all three things are mixed well, add vanilla essence and fresh cream and mix. When the batter is ready, filter it through a sieve.
6: Once the batter is ready after sifting, fill it as per the mould.
7: Bake the cheese cake in a double boiler at 155 – 160⁰c for 70 – 80 minutes.
8: – Once baked, cool it and keep it along with the mould in the deep freezer.
