About kulcha
Kulcha bharat me banaya gya eak prakar ka bread hai. Jisko India ke punjab State me pahli baar banaya gya tha, kulcha ko kai tarah se banaya jata hai . Kuch log kulcha ko ko yeast aur kuch log bina yeast ka he banaye hai. Kulcha ko banane ke liye flour , sugar , salt , oil ,curd , gluten , Improver , yeast ka use kiya jata hai. Kuch log kulcha ko oven me pakate hai, kuch log eska mitti se bane tandoor bhatti me pakate hai.

Ingredients:- flour , sugar , salt , gluten , Improver , yeast, oil , curd , water .
Recipe:-
Flour:- 20 gm
Salt:- 20 gm
Yeast:- 30 gm
Gluten:- 05 gm
Calcium powder:- 05 gm
Improver:- 05 gm
Oil:- 50 gm
Curd:- 100 gm
Water:- 550-600
Process of making:- In Hindi
Step1:- Sabse pahle eak bowl lenge phir usme flour, sugar , salt , gluten, Improver, yeast lenge .
Step2:- Ab bowl me liye sare ingredients ko spiral mixer ya usi bowl me pani daalker kneading karenge.
Step3:- Dough kneading karte samaya curd bhi mila lenge , phir jab dough acchi tarah mix ho jaye to oil daal ke mila ke nikal de.
Step4:- Ab dough ko apne weight anusar cut ker le aur ball jaisa round kerke , greased kiye huye tray me rakhenge thodi duri bana ke, phir ab proff hone ke liye rakh denge , jab thoda proff ho jaye to hath me oil laga ke ball jaise Dough ko uper se daba ke 3-4 in roti jaisa rounga ker lenge , ab phir proffing hone ke liye rakh denge.
Step5:- Ab dough proffing ho jaye to uspe green coriander leaves , aur mixed masala bhi daal sakte hai.
Step6:- Preheated oven me 210⁰c pe 10-15 minutes bake kare.

Step1:- First take flour , sugar , salt , gluten, Improver yeast in a bowl.
Step2:- Now knead the dough in bowl or in spiral mixer by adding water , and add curd , when dough mix well add oil and knead until dough become smooth.
Step3:- Cut the dough according to your weight , and make a round ball like burger bun and keep in oil greased tray , keep the distance, one burger to another , now keep dough for some proofing. After some proffing , press the bun from top and and make 3-4 inch like chapati. And keep it for proffing.
Step4:- After proffing put green coriander leaves on kucha and bake in 200⁰c preheated oven
