Wheat stalk bread eak prakar ka special bread hai , Jisko Epi bread ke name se bhi jana jata hai . Epi aur classic French baguette ka Recipe aur dough banane ke process lagbhag eak jaise he hai. Epi ko lamba lagbhag 15 inch tak lamba banaya jata hai , phir scirror ki madad se 45⁰ angle se loaf ko uper se cut kiya jata hai , Epi bread ko steam wale oven me golden aur crust thoda kadak hone tak pakaya jata hai. Epi me rosemary / Herb’s bhi daal ke pakaya jata hai. Wheat stalk bread banane ke liye flour , sugar , salt , yeast ka use kiya jata hai.Kabhi kabhi epi ka loaf banane ke baad uspe pura seasame seeds lagaya jata hai.
Baking timing:- 20-25 minutes
Baking temperature:- 225 -230⁰ celcius
Ingredients:- Flour , sugar , salt , yeast., (Rosemary , herbs , sesame seeds ) optional
Recipe:-
Flour :- 400gm
Sugar:- 15 gm
Salt:- 10 gm
Water:- 210 ml ( not more than 110⁰c).
Process of making:- In Hindi
Step1:- Sabse pahle eak bowl me warm water, yeast , sugar , salt daalke sabko acchi tarah mix ker le , aur 10-15 minutes ka rest denge.
Step2:- Ab bowl me flour daalke , use flour ko acchi tarah mix kerne ke baad , dough ki kneading karenge jab tak dough eakdam smooth na ho jaye. Ab dough ki greased ball me double size ka hone tak rakhenge.
Step3:- Jab dough double size ka ho jaye to surface pe thoda flour daalke , bowl se dough ko nikal lenge , Ab dough ko desire weight ka cut ker lenge , Aur dough ko 15 cm lamba shape denge , Ab banaye huye loaf ko flour dust kiye huye tray me rakhenge.
Step4:- Ab dough ko scissor se traditional epi shape me dough ko cut karke , wheat stalk bread ka shape bana lenge . Load ko cutting kerte samay scissor ko 45⁰ angle pe rakhe. Cut kiye huye tukde ko eak taraph rakhe Phir dusre ko uske opposite side me , es tarah loaf ko aakhri tak cut kare. Dhayan de ki cutting kerte samay loaf neeche tak pura na cut ho.
Step5:- Ab cut kiye huye loaf pe flour dust kare ya uspe egg wash kare , phir loaf ko proff hone ke liye rakh de , aur phir oven ko chalu ker ke preheat ker le.
Step6:- Ab loaf ko preheated oven me 230⁰c pe steam ke sath 20-25 minutes bake kare jab tak bread golden aur kadak na ho jata.
Process of making:- In English
Step1:- First take warm water in a bowl and add yeast , sugar , salt , and mix well and keep it for 10-15 minutes.
Step2:- Now add flour in bowl and mix well and start kneading the dough until become smooth and elastic. Then keep the dough in greased bowl for untill proff double in size.
Step3;:-When dough become double in size , then dust some flour on surface, and remove the dough from bowl and cut/ divide the Dough in equal weight. And make 15 cm long loaf and keep in flour dust tray.
Step4:- Now cut the epi like traditional epi style, and make a epi shape. Keep scissor at 45⁵ while cutting epis. Keep the cutting dough side by side .
Step5:- Now dust the flour on epi or wash with egg, and start oven for preheat.
Step6:-Now bake epi loaf in preheated oven for 20-25 minutes untill become golden and hard.
